Bok Choi
Bok choi belongs to the family of Asian mustards that have been cultivated in China for over 6,000 years. It is grown for its thick, crunchy pale green to white stalks and wide leaves that range from light to dark green. All parts of the plant are edible, with some varieties offering a mild, peppery flavor. Bok choy is also rich in vitamins A and C and is low in calories.
