Spaghetti Squash
Spaghetti squash (Cucurbita pepo) produces oval fruits about 8–10 inches long with a hard rind that ripens to golden yellow. When cooked, the flesh separates into spaghetti-like strands with a mild, slightly sweet flavor. Vigorous vines sprawl on the ground or climb a trellis and grow best in well-drained soil. Harvest when the vine dies back, the stem turns brown, and the underside changes from white to orange. Cut from the vine, leaving a short stem attached.
