Butternut Squash

Butternut squash (Cucurbita moschata) is a sweet, nutty squash with smooth tan skin and bright orange flesh. The medium to large, oblong fruits are versatile and great for roasting, soups, and other dishes. Harvest when the skin turns tan-beige, feels hard, with a dry, and woody stem. Cut from the vine with shears, leaving about an inch of stem attached.
