Lima Beans
Lima beans (Phaseolus lunatus) produce wide, slightly curved pods with seeds arranged in a single row. They can be harvested at different stages depending on how you plan to use them. Pick fresh beans when pods are plump, bright green, and tender. For shelling lima beans, harvest fully sized pods with seeds that are firm yet still soft enough to snap. For dry beans, leave pods on the vine until they turn tan and dry completely for long-term storage. Harvesting in the morning helps preserve flavor, texture, and firmness.
