Yellow squash is a tender, edible summer squash in the Cucurbitaceae family, with bright yellow skin, and a mild, versatile flavor. It can be enjoyed raw or cooked and produces large, trumpet-shaped flowers that are essential for pollination. Harvest yellow squash when fruits are 6–8 inches long and firm yet tender. A helpful tip: when the female flowers close, the fruit is usually ready to pick. Use a sharp knife or shears to cut, leaving a small portion of the stem attached to keep the squash fresh longer.
