Stevia
Latin Name: Stevia Rebaudiana
Stevia is a naturally sweet herb whose leaves contain steviol glycosides, the compounds responsible for its intense sweetness. The leaves can be used fresh, dried, or ground as a sugar substitute in drinks, desserts, and other recipes. This easy-to-grow plant produces small white flowers and benefits from regular pinching to encourage a compact, bushy shape. For the sweetest flavor, harvest leaves in the morning once plants reach about 8 inches tall and before flower buds open, as flowering can reduce leaf sweetness.
