Beets are a nutritious, cold-tolerant crop grown for both their sweet roots and edible greens. The roots range from round to elongated with deep red-purple flesh, while the leaves feature bright red stems. They grow best in loose, well-drained soil and offer resistance to cercospora leaf spot. Harvest when roots reach 1–2 inches across. Check for firmness, loosen the soil, and lift carefully, trimming the tops while leaving about an inch of stem attached.
