Brussels sprouts (Brassica oleracea, variety gemmifera) are a type of cabbage in the mustard family, Brassicaceae, widely grown in Europe and North America for their edible buds, known as “sprouts.” They may have been cultivated in Belgium as early as the 1200s, with the first recorded description appearing in 1587. Brussels sprouts are typically enjoyed cooked, and the young, tender sprouts have a milder, more delicate flavor than older ones. They are also a nutritious choice, rich in dietary fiber, folic acid, manganese, and vitamins A, C, and K.
